Meal Planning is Vital

After spending the weekend away from home, our refrigerator is/was quite empty. Add in the fact that I’m (Litsa) still fasting from eating meat (for Greek Easter)—–and I have yet to restock our freezer with a selection of meat choices! Thus, I’d say that I need to make a monthly meal planning skeleton and plan meals accordingly to refrain from unhealthy food choices that not only will leave us feeling unsatisfied but penniless! I can’t believe just how much our unhealthy menu plan for tonight cost us today:

Tostito Chips $3.79 (Regular Sized Bag)
Hot Dog Buns $2.59 (8 buns)
Velveeta Cheese $3.89 (16oz block)

We already had hot dogs at home that I had paid $4.54 for last week! But, I’m not happy with these prices! I would never have bought them if I didn’t want to finish soaking up the sunshine outside today (before the storms arrive in W. TN midweek). We also had planned on a few evening hours of yard work to pull the yard together for planting season! But after today’s price shock at the grocery store, I’ll return to my homework of meal planning for happy meals and buying items for meals with coupons! I think we should have opted for Tuna Sandwiches and salads that I had on hand already!

I guess, we know what’s for dinner tomorrow after a busy day today preparing the yard —-and balancing out the grocery budget for the week!

The fresh blueberries (one box) that I bought cost $3.99 today and fresh blackberries were $2.99——these fresh picks for snacking & healthy meals were pricey today too. But I know they are powerhouses for our bodies! However, I have the option of watching spring produce prices as I plan meals and snacks too!

Meal planning plans are on the top of my to do list after pondering how best to spend our money on feeding our family the rest of this spring/summer season when I know we’ll all want to spend more hours outside than indoors!

Time to start reconsidering that outdoor kitchen!?! How about you? Are you meal planning accordingly now that the spring weather has you beckoning to come outside?
