Try Something New: Mayocoba Bean

Have you ever heard of a mayocoba bean? This past winter, I (Litsa) found a bag of Mayocoba Beans on clearance and opted to try them. The Mayocoba Beans were medium sized yellow colored beans. They are also referred to as a canary bean. They were mild in flavor with a creamy texture. I pulled up a bean recipe that included them from my online files.

Cooking the beans was simple. I presoaked them and then placed them in the crockpot with my other ingredients. The creaminess of the beans blended well to create a most decadent winter soup that would be perfect any time of the year with a side salad.

Additionally, the texture of the cooked mayocoba bean is perfect for bean dips like my black bean dip or bean avocado dip. They puree well in the blender. Add your favorite ingredients to the beans and your dip is perfect for crunchy vegetables like carrots and celery.

Beans are a superb way to add in extra fiber and protein. Along with other legumes, try a new bean this season! You won’t be disappointed if you try the Mayocoba Bean!
