Oatmeal Blueberry Orange Muffin Recipe

Last summer we picked fresh blueberries and froze them. Frozen blueberries are a wonderful treat by themselvesĀ andĀ great in baked goods. This recipe is pretty healthy as far as muffins go- no butter or oil and minimal sugar.

Oatmeal Blueberry Orange Muffin Recipe

1 1/4 Cup Oatmeal
1 1/4 Cup Flour
1/3 Cup Brown Sugar
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1 Cup Orange Juice
1/4 Cup Applesauce
1 Egg
3/4 Cup Blueberries

Heat oven to 400 degrees. Spray a 12 count muffin cup with a cooking spray. Combine oatmeal, flour, brown sugar, baking powder and salt in a bowl. In a separate bowl combine orange juice, applesauce and egg. Add the wet ingredients to the dry ingredients and mix untilĀ incorporated. Fold in blueberries. Pour into muffin cups and bake for 16 minutes.

Tips

  • Make a double batch and freeze some of the muffins. Place the cooled muffins on a baking sheet and place in the freezer. Once frozen, remove from baking sheet and place in a freezer bag.
  • Add a dash of cinnamon for added flavor.
  • If you prefer a sweeter muffin, add a bit more sugar.
