Orange Cranberry Scones Recipe

Scones are the perfect accessory to an early morning cup of coffee, teatime or afternoon treat! If you have extra scones, you can freeze some for later!

Orange Cranberry Scones Recipe

Ingredients
  • 2 cups all purpose flour plus extra for dusting
  • 1 tbsp. baking powder
  • 1⁄2 tsp. salt
  • 5 tbsp. COLD unsalted butter, cut into cubes
  • 1 cup COLD whipping cream plus 1 tbsp. for brushing the tops of scones
  • 3 tbsp. honey
  • Zest from one orange (approximately 1-11/2 tbsp.)
  • 3⁄4 cup dried cranberries
  • 1 tbsp. coarse sugar (you can substitute with granulated sugar)
Instructions
  1. Preheat oven to 425 degrees F.
  2. In a large bowl whisk together flour, baking powder and salt then carefully transfer to the bowl of a food processor.
  3. Add butter cubes and pulse 15-20 seconds to break up the butter into pea sized chunks throughout the flour mixture. You could also use a pastry cutter to cut the butter into the flour if you prefer.
  4. In a separate bowl combine whipping cream, orange zest and honey, stir until honey is completely incorporated into the cream.
  5. Return flour mixture to the large bowl, pour in the cream mixture add cranberries and using a spatula quickly mix ingredients until a crumbly dough forms. This step should take no more then 30-45 seconds---the less you handle the dough the fluffier your scones will turn out.
  6. Transfer dough onto a well-floured surface and knead 3-4 times until the dough comes together. Shape into an 8-inch disc. Cut into 8 triangles and place on a parchment lined baking sheet.
  7. Brush the tops of each with whipping cream, sprinkle with sugar and bake for 12-15 minutes or until golden brown.
  8. Cool for 10 minutes.
  9. Serve & enjoy! Best served fresh. If however you wont need all of the scones right away, freeze them on a cookie sheet after cutting until firm, store in a freezer bag and bake from frozen when needed.
