Orzo Pilaf Recipe

I am on a cooking spree right now and I am trying to cook more from scratch. I found some orzo in my pantry and decided to give it a try. Side dishes are my weakness- I tend to resort to boxed pastas and rice. However, this recipe turned out really well!

Orzo Pilaf

1/2 Cup Onion, chopped
1/2 Cup Green bell pepper, chopped
1 Garlic Clove, pressed
2 Tablespoons Olive Oil
3/4 Cup Orzo
2 Cups Chicken Broth
1 Medium Carrot, shredded
1 Teaspoon Italian Seasoning

Place olive oil in a skillet over medium heat. Add onions, bell pepper and garlic to hot oil. Saute until tender. Add orzo and cook for about 3 minutes. Orzo will turn slightly brown. Add chicken broth, shredded carrot and seasoning. Heat to boil and then reduce to low. Cover and simmer for 15 minutes.

Tips

  • To shred carrots, use a cheese grader. I use the medium grate.
  • Add leftover diced leftover meat for a full meal.
  • Be creative- add different vegetables or seasonings!
