Peanut Butter Jelly Bars

My child lives off peanut butter and jelly sandwiches (she is a picky eater) and I have to admit I still love them too, but for those of you who are beyond them check out this dessert—it combines all that is great about the classic combination in one crunchy yummy bar!

Spread Jelly

This is a perfect recipe to make with your kiddos! They can help spread the jelly on the crust before the nuts are added on top. What a perfect treat- sweet crust, gooey center and crunchy top!

Peanut Butter & Jelly Bars Recipe

Ingredients
  • 1 stick unsalted butter, softened
  • ¾ cup sugar (or corresponding measurement for sugar substitute)
  • 1 egg
  • ½ tsp pure vanilla extract
  • 1 cup creamy peanut butter (use reduced fat to cut calories)
  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ cups jelly (I used strawberry, but choose your favorite variety of preserves---sugar free to cut calories)
  • ⅔ cup salted peanuts
  • ⅔ cup peanut butter chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 9x13 inch baking pan with cooking spray or Bakers Joy.
  3. In a large bowl cream together butter and sugar until fluffy using an electric mixer. Add egg, peanut butter and vanilla and beat until well combined.
  4. In a separate bowl, sift together flour, baking powder and salt.
  5. Slowly add flour mixture to wet ingredients and mix until all ingredients are combined.
  6. Reserve ½ cup of dough; using your fingers gently press the remainder of the dough evenly into the bottom of the pan.
  7. Spread preserves over dough, crumble the reserved dough over the top and sprinkle with peanuts & peanut butter chips.
  8. Bake 40-45 minutes or until golden and bubbly. Cool completely.
  9. Cut into bars.
  10. Serve & enjoy!
