Pesto & Sundried Tomato Pasta Recipe

Nothing says summer more than fresh basil! I love the smell and flavor. This is an easy pasta recipe that can be modified easily. Make it a main dish by adding cooked diced chicken breast.

Basil Pesto & Sun Dried Tomato Pasta

1/2 Box Rotini Pasta, cooked according to directions
3 Sun dried tomatoes, chopped
1/4 Cup Pine Nuts
2 Tblsp. Basil Pesto
2 Tblsp.  Olive Oil
Fresh Basil for garnish

In a small frying pan heat olive oil over medium heat. Add pine nuts, and toast until golden brown.  Add in chopped sun dried tomatoes, and heat for one minute. Remove from heat, and pour over drained, hot pasta. Add the basil pesto, and top with fresh basil.

Tips

  • Add sliced black olives, fresh grape tomatoes or canned diced tomatoes for other options.
  • This pasta is good cold or hot.
  • Add diced chicken for protein.
