Pizza Casserole Recipe

The best meals are the ones you can cook once and enjoy for days, well that is if your family enjoys left overs and mine certainly does. This casserole recipe yields 8 servings and combines everything you love about pizza and saucy pasta into one dish! Follow the recipe or add your own twist to the ingredient list by referencing your favorite pizza toppings! You can’t go wrong any way you make it!

Ingredients
  • 23.9 oz jar spaghetti sauce
  • 14 oz jar pizza sauce
  • 8 oz can of tomato sauce
  • 1 tsp Italian seasoning
  • 2 bay leaves
  • 2 cloves of fresh garlic, minced
  • 16 oz pkg of pork sausage (substitute with ground beef, turkey or any variety of sausage you prefer)
  • 1 tbsp olive oil
  • 13.25 oz box whole wheat penne rigate (substitute for any variety of noodle you prefer)
  • 13.25 oz canned mushrooms, drained
  • 30-35 pepperonis (I used 70% less fat turkey pepperoni, but substitute for any variety you prefer)
  • 2 cups part skim mozzarella cheese, shredded
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium saucepan combine spaghetti sauce, pizza sauce, tomato sauce, Italian seasoning and bay leaves, bring to a boil, then reduce heat and simmer. Stir occasionally while prepping other ingredients.
  3. In a medium sauté pan over medium-high heat add oil and fresh garlic, cook for 3-5 minutes.
  4. To the garlic infused oil, add sausage and cook until no longer pink, drain and set aside.
  5. In a 4 quart pot, cook pasta according to package instructions until al dente. Drain and return to pot.
  6. To the pot of noodles add meat, mushrooms and sauce (be sure to remove the bay leaves before adding to the pot) and mix well.
  7. Grease a 9x13 casserole dish or baking pan and transfer the pasta and meat mixture from pot to dish, spread out and layer the top with pepperonis.
  8. Sprinkle on mozzarella cheese, cover with foil and bake for 30-35 minutes.
  9. Remove foil and bake an additional 5-10 minutes or until cheese melts completely and begins to bubble and brown.
  10. Allow to cool for 5 minutes.
  11. Serve and Enjoy!
