Polenta Taco Bake

Last week I made a batch of polenta and I had excess. I came up with this easy recipe and it was so good! If you have never tried polenta, it is made from cornmeal. It can be bought pre-made but it is very simple to make and cheap. Any easy recipe to use is Basic Polenta by Giada De Laurentiis.

Polenta Taco Bake

Polenta, Make ahead and place in 2.5 qrt. casserole dish
1 Lb. Ground Beef or Turkey
4 oz. Grated Cheese
Taco Seasoning Packet
Lettuce, Chopped
Tomatoes, Shredded
Sour Cream

Preheat the oven to 375 degrees.

Cook the ground meat until no longer pink. Add the taco seasoning and cook according to package directions. Place the prepared meat on top of the cooled polenta in the casserole dish. Sprinkle the cheese on top. Bake for 20 minutes or until heated through.

Cut a square of the taco plate and place on a plate. Pile on shredded lettuce, tomatoes and a dab of sour cream.

Tips

  • I used ground turkey and it turned out great! Hubby thought it was beef!
  • Use a variety of toppings- olives, onions or salsa.
  • We actually had polenta as a side dish one night and then I used the leftovers to make this dish. I always try to think ahead with cooking!
