As we head into the spring produce months, keep in mind that you can preserve fresh produce by flash freezing. Strawberries and blueberries are my favorite fruits to flash freeze. My boys love to eat frozen berries for dessert!

I wrote a post a couple of years ago that explains flash freezing in detail. Make sure you read it if you don’t know what flash freezing is. The goal of flash freezing is to prevent the produce from sticking together when frozen.

Most fruits freeze really well. Vegetables need to be blanched to kill the enzymes. You can read more about how to freeze kale and how to freeze green beans for reference on freezing vegetables.

Why would should you freeze produce?

When you find produce at a rock bottom price, you can freeze it to use at a later date. For example, I recently found pints of blueberries for $1.49. I bought three pints and flash froze them to use for future baking and snacks. If you need a reference for what my rock bottom produce prices are, checkout my post What is a Good Price for Fresh Produce.

Do you buy extra produce for freezing? What produce do you buy in bulk for freezing?
