Pumpkin Cookies

I really enjoy the flavor of pumpkin! Often times I make pumpkin bread and my boys LOVE it. This weekend I decided to try something new with my homemade pumpkin puree; I made pumpkin cookies! These cookies are cake like. They are soft and puffy. My family and the neighbor girls really enjoyed this pumpkin treat!

For my homemade pumpkin puree, I used the Good Cook Pumpkin Scoop. This scoop is a lifesaver and I wish I had this years ago! It really makes scooping out the pumpkin “guts” so easy.

This is really genius! The Good Cook Pumpkin Scoop is available at Walmart and you can find Good Cook Bakeware online.

Pumpkin dough

I made some larger cookies- about 2 tablespoons of dough- as well as some smaller cookies. The big cookies were immediately scooped up by the kids!

Pumpkin Cookies Recipe

Ingredients
  • ¼ Cup Unsalted Butter
  • 1½ Cup Granulated Sugar
  • 1 Cup Pumpkin Puree
  • 1 Egg
  • ¼ Cup Milk
  • 3 Cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Salt
  • ½ teaspoon Pumpkin Pie Spice
  • ⅛ teaspoon Ground Cloves
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl cream butter and sugar.
  3. Beat in the pumpkin puree, egg and milk.
  4. Combine the flour, baking soda, cinnamon, salt, pumpkin pie spice and cloves in a large bowl.
  5. Gradually add dry mixture to creamed mixture.
  6. Drop by teaspoonfuls on a greased cookie sheet.
  7. Bake at 375 degrees for about 10 minutes.
