Quiche Recipe – Egg Pie

The great thing about Quiche is that you can adapt the ingredients to what you have on hand and what you like. I reduced the bacon and cheese by half in this recipe and added more vegetables. I always make two at a time- one for dinner and one for the freezer.

Quiche Recipe

1 Pie Crust – Single (I used homemade pie crust but you can use prepared)
3 Slices Bacon, cooked and crumbled
Chopped Vegetables (I used broccoli and mushrooms)
3 Eggs, beaten
1 1/2 Cup milk
1/4 Teaspoon salt
Dash Nutmeg
3/4 Cup Shredded Cheese ( I used mozzarella but swiss is also good!)

Preheat oven to 450 degrees. Prepare pie crust recipe. Place single crust in a pie plate. Press a double thickness of foil on top of the pie crust like a liner. Bake at 450 degrees for 8 minutes. Remove foil and bake for another 4 minutes. Remove from oven and reduce oven temperature to 325 degrees.

In a mixing bowl, stir eggs, milk, salt and nutmeg. Place chopped vegetables, bacon and cheese in the bottom of the pie shell. Pour egg mixture over the top. bake at 325 degrees for 35-40 minutes.

Tips

  • Quiche is done when it is firm. A knife inserted in the middle should come out clean when done.
  • To freeze, prepare as above and cook. Let quiche completely cool. Wrap in Press’n Seal and foil and freeze for up to 2 months. To cook after freezing, do not thaw. Place frozen quiche in a 350 degree oven for 20-25 minutes.
  • If pie crust edge is browning too quickly, place foil or pie shield over the crust.
  • When cooking the quiche, place the pie plate on a cookie sheet just in case it overflows.

To get my boys to eat Quiche, we call it Egg Pie. Everyone loves pie! What do you like in your quiche?
