When it’s cold outside, warm hearty food is what my body craves. In my opinion you can NEVER have enough casserole recipes—there is always an occasion for one—Sunday brunch, holidays, wakes, birthday bashes, busy weeknights etc. Check out this recipe for a hearty breakfast casserole!

For this recipe you can use store bought biscuit dough or whip up these homemade Greek Yogurt Biscuits. Homemade biscuit dough is very easy to make and has no preservatives like the store bought dough! Instead of breakfast sausage, you could substitute venison sausage. This recipe is very versatile!

The first step is to cut the biscuit dough into quarters. Half of the biscuits will be cooked in the bottom of the pan before the sausage gravy is added. Once the sausage gravy is cooked, place it over the cooked biscuits. Then add the rest of the biscuit dough on top. Bake the casserole for about 25 minutes.

Author:
Recipe type: Breakfast
Ingredients
  • 8 uncooked biscuits (store-bought or Greek Yogurt Biscuits recipe can be found at
  • Howtohaveitall.net)
  • 16 oz. bulk sausage (breakfast sausage, pork or turkey etc.)
  • 3-4 tbsp. flour
  • 1 tsp. salt
  • ½- 1 tsp. black pepper (more or less to taste)
  • ¾ tsp. dried sage
  • 2 ½ -3 cups milk
Instructions
  1. Preheat oven to 400 degrees F.
  2. Prepare a 1 ½ quart casserole dish or glass pie plate with cooking spray.
  3. Cut biscuit into quarters, layer half on the bottom of the prepared dish; bake for 10 minutes.
  4. Meanwhile, in a skillet brown the sausage until fully cooked over medium-high heat (Do not drain). Use a spatula to break apart into small chunks as it browns.
  5. Once browned sprinkle the flour over the cooked sausage and the drippings in the skillet and stir until all the flour is absorbed. Lower heat to medium and cook 3-5 minutes stirring frequently.
  6. Slowly pour milk into the skillet while constantly stirring.
  7. Add salt, pepper and sage; bring to a low boil stirring constantly until the gravy begins to get thick. It should be pourable but not runny.
  8. Pour over cooked biscuits in casserole dish. Layer remaining biscuit quarters over the top.
  9. Bake for 25 minutes. If biscuits brown too quickly place a sheet of aluminum foil over the top while the casserole finishes baking. The gravy should be thick and bubbly and the biscuits golden brown.
  10. Remove from oven, cool for 5 minutes.
  11. Serve & enjoy!
Notes
Experiment with additional seasonings for variety or add a bit of your favorite shredded cheese if desired!
