Spinach Meatloaf Recipe

There are a thousand different ways to prepare meatloaf and I am sure almost all of them are delicious, but from personal experience this meatloaf recipe will certainly hit the spot. Loaded with Italian flavors, cheese, spinach and onions it’ll leave you stuffed and fully satisfied!

Ingredients
  • 1 ½ lbs lean ground beef or ground turkey
  • 2 eggs
  • ¼ cup light sour cream
  • 2 tbsp Worcestershire sauce
  • ¼ fresh onion, diced
  • ½ cup parmesan cheese, grated
  • ¾ cup fat free Italian dressing
  • 1 ½ cups Italian seasoned bread crumbs
  • 1 cup chopped fresh spinach
Instructions
  1. Preheat oven to 375 degrees F.
  2. Lightly grease a 5x9 loaf pan in preparation for meatloaf.
  3. Combine all ingredients in a large bowl just until well mixed. (Too much handling will result in tough beef).
  4. Transfer to the prepared loaf pan and cover with aluminum foil.
  5. Bake covered for 45 minutes. Then uncover and bake an additional 15 minutes or until internal temperature reaches a minimum of 160 degrees F.
  6. Remove from oven and allow to rest 5 minutes before slicing.
  7. Serve and enjoy!
