Taco Salad Recipe

Summer salads make great take-a-long dishes to cookouts & picnics or are great just to have as a convenient side dish with your own lunch or dinner at home, especially if your husband is manning the grill! Add this taco salad recipe to your own collection of great summer side dishes!

Taco Salad Recipe

Ingredients
  • 1 lb lean ground beef or turkey
  • 1 taco seasoning packet
  • ¾ cup water
  • 1 cup taco blend cheese, shredded
  • 2.25 oz can of sliced black olives, drained
  • 8 oz cherry tomatoes, halved
  • 2 cups lettuce, shredded
  • 1-1 ½ cups Catalina dressing
  • Doritos, taco shells, tortilla chips or other taco flavored chip, crumbled (topping)
Instructions
  1. In a sauté pan brown ground beef over medium-high heat until no longer pink, drain excess grease and return to pan.
  2. Add taco seasoning mix and ¾ cup water, stir and simmer over medium-low heat for 10 minutes. Stir occasionally.
  3. Remove from heat and cool.
  4. Once meat has cooled, combine meat, cheese, black olives, tomatoes, lettuce and dressing; mix together and chill.
  5. Crumble preferred chip on top before serving.
  6. Serve and enjoy!
Notes
* Lettuce becomes soggy in the salad if it sits overnight, so if you are preparing the dish ahead of time refrain from adding lettuce until you are ready to serve. * Add ½ small onion to beef before browning. * Guacamole, avocado slices, salsa and sour cream also make great additions to this dish; add as a topping before serving. * Use ground turkey or shredded chicken breasts for an alternate to ground beef.
