Triple Layer Berry Cake Recipe

Layered Berry Cake Recipe

We celebrated hubby’s birthday last week and I made a triple layer berry cake. I am not usually a cake baker and my pictures are not as good as the cake tasted! What I love about this recipe is that it uses a boxed cake recipe to start with added ingredients to make it homemade (or semi-homemade!).

Recipe: Triple Layer Berry Cake

Ingredients

  • 1 package white cake mix (18.25-ounce)
  • 1 package strawberry gelatin (3-ounce)
  • 4 large eggs
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup finely chopped fresh strawberries
  • 1 cup applesauce
  • 1/2 cup milk
  • 1/2 cup simple berry sauce
  • 2 tubs white frosting (16 ounces)

Instructions

  1. Preheat oven to 350 degrees.
  2. Place cake mix, gelatin, eggs, sugar, flour, strawberries, applesauce and milk in a large mixing bowl.
  3. Beat at low speed with an electric mixer 1 minute.
  4. Scrape down the sides, and beat at medium speed 2 more minutes, stopping to scrape down sides. Batter should be bit fluffy when mixed well.
  5. Pour batter into 3 well greased and floured 9-inch cake pans.
  6. Bake at 350° for 26-29 minutes or until cakes spring back when lightly pressed with a finger.
  7. Cool in pans on wire racks for about 10 minutes. Remove from pans by turning upside down and cool completely on wire racks.
  8. When the cake is cool, spread frosting over one layer of cake. Place berry sauce (recipe for berry sauce at this link) over the frosting. Stack a second layer of cake on top and repeat frosting and berry sauce layers. Place the third layer on top and use the rest of the frosting to cover the cake. I also placed the remaining berry sauce on the very top layer of frosting. There is a Strawberry Buttercream Frosting recipe that goes with this cake if you prefer that over store bought frosting.

Tips

  • The original recipe calls for vegetable oil instead of the 1 cup of applesauce. I always try to substitute applesauce for oil as I don’t like the extra calories. No one could tell I used applesauce!
  • You can also use frozen strawberries if you don’t have fresh ones. Just let the strawberries defrost and puree with a hand blender before adding to the cake batter.
