Try Something New: Kale

The kale growing in our garden is finally ready! I got started late with the Fall garden but the weather has been perfect lately for vegetables such as kale. This is the first time I have grown and eaten kale. It is full of nutrients such as Beta Carotene, Vitamin C and Calcium. Kale is in the cabbage family.

Capt. M tried the kale raw as his try something new this week. Since he is a broccoli lover I had high hopes for kale too. It is always fun to watch his first reaction to something new! He was unsure at first but took a second bite. Finally he says, “It’s good. I like it!”

Mr. B and I tried kale chips. In true 3 year old form, I really had to persuade him to try it. He took a little nibble and declared that he didn’t like it. This is usually the case with Mr. B- he is at an age where new things are not appealing at all. Kale chips are easy to make and a healthy alternative to potato chips when you are craving something crispy.

Kale Chips

Kale
Olive Oil
Sea Salt

Heat oven to 350 degrees.

Wash and dry kale. Tear kale into pieces. Dash with a small amount of olive oil or use cooking spray for very low calorie. Sprinkle with sea salt. Place on baking sheet and bake for 10 minutes.

Kale chips are very light. The crumble easily. I think they are best when served right out of the oven.

  1. I like putting kale in winter soups. I don’t use a recipe, just add broth, beans, and whatever veggies and leftover meat I have in the fridge. The kids don’t really like the greens in the soup, so I leave them in larger pieces so the kids can fish them out.
