What to Do With Leftover Ham

Many of you probably have leftover ham like me. There are so many things you can make with leftover ham and I thought I would highlight a few. Plus, if you like ham and your grocery store is still running last weeks ad- pick up an extra ham. I have seen them advertised as low as $1.29/lb. and they freeze great!

Ham & Pea Carbonara

Ham, Brie Cheese & Raspberry Jam on Toasted Bread

Quiche

Ham & Scalloped Potatoes

Chef Salad

Add to Potato Cheddar Soup

Scrambled Eggs, Diced Ham and Cheese (my boys favorite!)

Lentil Soup

Save the ham bone and make Ham and Beans. This is one of the most economical dinners ever!

Soak about 1 cup of beans in water overnight. I used Navy Beans but other varieties will work. The beans soak up a lot of water so make sure there is enough water in the bowl.

In the morning drain and rinse the beans. Place in a slow cooker and add the ham bone. Add at least 4 cups of water. I like my ham and beans like soup so I add a little more water. You can add onions, celery and a bay leaf if you want or just cook with ham and beans! Cook for 8 hours on low.

Ham has a lot of flavor! You only need a little to make a big impact in a meal. If you can’t use all of the ham within the next few days, freeze it in meal size portions. You can also freeze the ham bone if you don’t have time to make a soup right now!

Fried Rice:
Cooked rice, peas, celery, diced ham and soy sauce, then mix a couple of eggs in till the eggs cook.

Our local Food Lion (in Gordonsville) has had Smithfield ham on sale for 67 cents/pound for the past two weeks. I bought four. Cooked one on Saturday and put three in the freezer. They are so easy to cook when we have guests. We also use as lunch meat as well.
