Pumpkin Meat Sauce

This quick and simple pasta skillet has a surprise ingredient & it adds a wonderful creaminess to this dish & a boost of beta-carotene. Can you guess what it is? Whole Wheat Rotini with Pumpkin & Meat Sauce Recipe

Ingredients
  • 13.25 oz. whole wheat rotini
  • 1 lb. lean ground beef or ground turkey
  • 24 oz. marinara sauce
  • ½ tbsp. dried basil
  • Salt & pepper
  • ½ cup pure pumpkin puree
  • 1 cup shredded cheese (any variety)
Instructions
  1. Cook pasta according to package instruction for al dente; drain & set aside.
  2. In a large skillet brown the ground beef over medium high heat until no longer pink, season with dried basil, salt & pepper. Once cooked through drain excess grease and return to skillet.
  3. Add marinara sauce, pumpkin puree, rotini noodles to the skillet with the meat and stir to combine. Simmer over medium-low heat for 8-10 minutes or until hot & bubbly.
  4. Remove from heat and stir in cheese until melted through.
  5. Serve & enjoy!
