Work Week Menu Plan: Busy, Busy, Busy

Sooooo, I found out last week that baseball will pretty much be ruling our lives for the next two months! It turns out that Capt. M will be having two games a week plus a practice and Mr. B has one game and a practice day. So our dinner menu just got complicated- or easy- depending on how you look at it! Meals will be on the go or very easy.

Monday- Corned Beef Sandwiches, salad (leftover corned beef from Sunday- yes we had St. Patrick’s Day a week late!!!)

Tuesday- Homemade CalzonesĀ  (Made over the weekend to be ready to reheat quickly.)

Wednesday- Fish Tacos

ThursdayEggplant Parmesan (Eggplant already breaded and frozen in freezer)

FridaySlow Cooker Chili
