Work Week Menu Plan: Cooking From Scratch

I have been on a mission to eat more whole foods and to cut out the processed stuff. For the last two weeks I have been making all of our meals homemade- no boxed stuff. It is a little more time consuming but the benefits are sooooo worth it! I spend time on the weekend preparing for the work week meals. Plus we are going back to eating a lot of produce- nothing complicated- just a lot of salads and fruit. I also spent time making homemade salad dressing this weekend since the store bought dressing has MSG.

Monday- Beef Barley Soup (Made on Sunday in the slow cooker), Cornbread, salad with Poppy Seed Balsamic Vinaigrette

Tuesday- Turkey Burgers, Sweet Potato Fries

Wednesday- Spinach Tortellini Soup, Salad

ThursdayFish Tacos, Cilantro Lime Rice

Friday– Eggplant Parmesan (Eggplant is on sale at Kroger this week)
