Work Week Menu Plan: Back to School

I am back with the menu planning! Sorry for such a long hiatus. The boys are back to school this week which means we need to get organized! Mr. B has been dealing with some sort of allergy which is making our menu planning a little challenging. He had hives for 6 days straight and is undergoing some blood tests. For now his Dr. suspects a possible meat allergy. Until we get the results back, Mr. B can’t have any beef or pork. The rest of the family will continue with our regular menu plan since we have a freezer full of beef and pork! However, Mr. B will only have fowl or fish.

I did cook ahead this weekend and made:

Marinara Sauce (I left out the sausage so Mr. B could eat this. Some is in the freezer for future.)

Calzones (Used turkey)

Homemade Chicken Nuggets

Monday- Steak, Grilled Potato Packets, Tomato Cucumber Salad (Mr. B will have homemade chicken nuggets)

Tuesday- Calzones

Wednesday- Oven Fried Tilapia Recipe, Grilled Vegetables, Couscous

Thursday– Eggplant Parmesan (Use marinara sauce already made)

Friday– Chicken, Roasted Rosemary Glazed Carrots & Potatoes
