Work Week Menu Plan: Back on Track

For the last several weeks of 2015, I got way off track with my menu planning. In fact I hardly cooked at all! With hubby working long overtime hours at UPS and the rest of the families extra curricular activities, we were hardly home. December is always rough for us but that’s okay because I know we can get back on track in January.

I spent Sunday afternoon in the kitchen preparing for the week. It took me a few minutes to get motivated to start the cooking process. The feeling of accomplishment quickly depleted the lack of motivation though! I made chocolate banana cake, spaghetti squash bake (my lunches), pizza rolls, orzo with Parmesan cheese and ravioli bake (lunches). We also have leftover enchiladas that hubby will have for lunch.

Orzo-Pasta-recipe

Monday-  Chicken Sandwiches, applesauce

Tuesday- Pizza Rolls, salad, oranges

Wednesday- Orzo with Parmesan cheese, sausage, broccoli

Thursday– Peurogis (in freezer), ham, carrots
