Work Week Menu Plan Week of 10/5/15

Rain, rain, rain. Central Virginia has been gloomy for a week now. The sun is supposed to come out this week and I couldn’t be more excited! Since we were inside most of the weekend, I was able to do some meal prep for the coming week.

I made buffalo roasted cauliflower for lunches, two loaves of pear bread, beef barley soup and I roasted vegetables. For the roasted vegetables I just chopped mushrooms and eggplant into large chunks. I added Italian seasoning, garlic and coconut oil and roasted at 450 degrees for about 15 minutes. I will use these veggies in pasta or eggs for my lunches and late night dinners.
