Work Week Menu Plan Week of 1/26/16

We’ve been snowed in since Friday here in Central Virginia. I think we will finally be able to venture back out into the real world later this afternoon. In my area it takes a couple of days to clear 16″ of snow from all of the back roads! Although I have had plenty of time to cook, my usual grocery shopping trip didn’t happen last week. We have plenty of food to eat but are lacking a bit in fresh produce. Plus I only have a three day work week this week so I don’t have to prep everything ahead of time.

I did make coconut granola balls for a sweet treat and hubby baked chocolate chip cookies. We also have leftover slow cooker chili, sweet potato chicken skillet and a roast that we will use for lunches. I also plan to make grilled sweet potato salad for lunches.

Monday- Slow cooker whole chicken, Parmesan orzo, applesauce, green beans.

Tuesday- Pizza Rolls, applesauce, carrots.

Wednesday- Meatball Subs (cook meatballs in slow cooker with sauce)

Thursday– Pierogis, ham, broccoli.

FridayItalian sausage bake, green salad.
