Work Week Menu Plan Week of 2/1/16

With only two half days of school last week due to snow, I’m looking forward to getting the boys back on routine this week. The weather did a complete flip flop – from below freezing and snow to 64 degrees and sunny. Crazy!

I did do some meal prep this weekend. I baked a ham on Sunday which will be the base for many meals this week. I’m still eating a little different than the rest of the family – lot’s of produce, minimal processed food and mainly whole grains. My body feels great!

My meals:

Breakfast: homemade oatmeal

Snacks: Greek yogurt, veggies & hummus, nuts, oatmeal bites, fruit

Lunches: spaghetti squash & meatballs, leftover chicken pesto flatbread pizza, quinoa & veggies

Dinner: Kale salad, eggs & veggies, protein drink, roasted cauliflower

Ham Bone Soup Recipe

Rest of the Family:

Monday-  Ham, homemade mac & cheese, broccoli (leftover from Sunday)

Tuesday- Chicken nuggets, carrots, tater tots, applesauce

Wednesday- Breakfast Sandwiches (use leftover ham)

ThursdaySlow cooker ham & bean soup

Friday– Out to dinner for hubby’s birthday!
