Work Week Menu Plan Week of 2/15/16

It’s another snow day here in Central Virginia! Although I’m ready for Spring, I’m thankful for an extra day home with my family this week. Instead of prepping food for the week on Sunday, I’m doing that today.

My Meal Plan:

Breakfast: oatmeal with berries and nuts

Snacks: Greek yogurt, veggies & hummus, pumpkin cranberry bread, energy bites, fruit

Lunches: Potato Cheese Soup (made Monday), sweet potato, avocado salad (made Monday) over brown rice

Dinner: eggs & veggies, protein drink, kale salad

Rest of Family:

Italian Sausage Zucchini Bake

Monday- Lower fat Alfredo sauce, pasta, shrimp & green beans

Tuesday- Enchiladas (made Monday)

Wednesday- Southwest chicken wraps

Thursday– Grilled cheese, strawberries, carrots
