Work Week Menu Plan Week of 2/8/16

What a weekend! My boys ran in their first 5k race on Sunday! I couldn’t be more proud as Capt. M (age 9) ran it in 25:37 placing 10th overall out of 98 participants! Mr. B (age 7) didn’t disappoint with a time of 31:06 and 27th overall. Truly amazed by my little guys!

Sunday afternoon I did some meal prep for the coming week. We have a busy week coming up as the karate tournament season begins Saturday.

My meals:

Breakfast: oatmeal with nuts, berries and soy milk

Snacks: hummus, veggies, fruit, Greek yogurt, almonds, oatmeal bites, string cheese

Lunches: turkey sweet potato skillet, lasagna zucchini boats (made both on Sunday)

Dinner: eggs & veggies, protein shakes, chicken & quinoa

Rest of Family:

Monday- Pizza (made homemade on Sunday), salad

Tuesday- Grilled cheese for boys, sweet potato skillet for hubby

Wednesday- Meatballs & spaghetti

ThursdaySouthwest Chicken Bowls

Friday– Out to dinner
