Work Week Menu Plan Week of 7/27/15

After several weeks, I am back to menu planning! June and July were extremely busy months for us. We traveled, Capt. M. had all-star baseball and I had intense training for karate nationals. I spent very little time in the kitchen during this time. We relied on sandwiches, tacos, spaghetti, eggs and pizza during this time. We didn’t eat as healthy as I would have liked, but we survived.

I was very happy to spend some time in the kitchen this weekend cooking for the week. I made chocolate banana muffins and chocolate protein balls for snacks. I also made buffalo roasted cauliflower for lunches and zucchini tomato pie for dinner. It feels good having home cooked food on hand again!

Monday- Zucchini Tomato Pie (made ahead of time)

Tuesday- Slow Cooker Chicken Thighs, Mashed Potatoes, green beans

Wednesday- Taco Salad (use leftover chicken from Tuesday)

Thursday– Spaghetti
