Work Week Menu Plan Week of 8/24/15

On Sunday we were once again blessed with a surplus of garden crops from our neighbor! A bucket of tomatoes, several pounds of potatoes and four huge cucumbers. I ended up making fresh salsa with some of the tomatoes to enjoy this week. We will also enjoy tomato cucumber salad – so simple but good! Thankfully the potatoes wills tore for several weeks in a dark area. As far as the extra tomatoes, I’ll be sharing with friends.

I also made a peach dump cake, two loaves of pear bread, roasted beets for lunch salads and roasted cauliflower.
