¼ applesauce (plain or cinnamon work equally well)
¼ cup pure maple syrup
1 tsp. pure vanilla extract
1 cup combination of chopped walnut, almonds and pecans
1 cup dried cranberries
Instructions
Preheat oven to 350 degrees F.
Line a large baking sheet with parchment paper; set aside.
In a large bowl combine the rolled oats and puffed cereal.
In a medium bowl mix together the pumpkin pie spice, salt, brown sugar, pumpkin puree, applesauce, maple syrup and vanilla extract until well combined.
Pour wet ingredients onto the dry; stir until evenly coated.
Spread oat mixture onto the prepared baking sheet using a rubber spatula to spread it out into an even layer.
Bake for 30 minutes.
After 30 minutes remove from oven and using a large spatula divide into sections and flip.
Sprinkle with chopped nuts.
Bake for an additional 15-20 minutes or until crisp and golden.
Cool completely.
Once cooled break apart and add dried cranberries before serving and/or storing in an airtight container.
