Add all ingredients (powdered sugar, cream cheese, butter, vanilla and dye of choice) to the bowl of a stand mixer. Attach bowl & flat beater attachment and mix on speed 2 for 30-45 seconds. Scrape bowl with spatula increase mixer speed to 6 and mix for an additional 2 minutes or until smooth and creamy. Chill for 5 minutes in the refrigerator before frosting cupcakes.
