Tomato Basil Chicken Pasta Recipe

Ingredients
  • 1 box Garden Delight Fettuccini Noodles (or preferred variety)
  • 4 chicken breasts, boneless & skinless
  • Kosher salt
  • Fresh ground peppercorn or black pepper
  • 1⁄4 cup olive oil
  • 3-4 cups tomatoes, chopped or halved if using cherry tomatoes
  • 1-2 tbsp. garlic, minced (more or less to taste)
  • 6 tbsp. unsalted butter, cubed
  • 3⁄4 cup fresh basil, roughly chopped
  • 1⁄4 cup grated Parmesan cheese
Instructions
  1. Bring 4 quarts of water to a boil and cook fettuccini noodles to al dente per package instructions.
  2. Heat olive oil in a large sauté pan over medium high heat.
  3. Season chicken breasts on both sides with kosher salt and pepper to taste.
  4. Once oil is hot, carefully place chicken breasts into the pan and cook on each side for 3-4 minutes (bigger breasts make take additional time).
  5. Add tomatoes, basil, garlic, butter and additional salt and pepper if desired. Gently stir and move ingredients throughout the pan, the tomatoes will pop and sputter as will the hot oil and butter.
  6. Continue stirring and cooking while the noodles are boiling. The garlic and herbs infuse the oil and butter and the tomatoes will cook down blending with the oil and butter to create a flavorful sauce.
  7. Drain noodles when they finish and remove the chicken from the pan & set aside on a cutting board. Toss noodles in tomato basil sauce.
  8. Cut chicken into strips.
  9. Distribute noodles and sauce amongst plates, top with chicken, sprinkle with Parmesan cheese.
  10. Serve & enjoy! Yields 4 servings.
