Lemon Coconut Ramekins Recipe

- 1 cup shredded coconut
- ¼ cup almonds, coarsely chopped
- 1½ tbsp honey
- 1 tbsp coconut oil
- 1 tsp. chia seeds
- Zest and juice of ½ lemon
- Combine all ingredients in a medium bowl and mix well.
- Divide ingredients among three ramekins.
- Serve immediately or try chilling the ramekins in the fridge!
You can use a food processor to blend the ingredients if you want a finer product. I liked the chunky almonds and coconut!
