Pumpkin Cobbler Recipe

Ingredients
  • 15 oz. can Pure Pumpkin Puree
  • 1 cup evaporated milk
  • 2 eggs, lightly beaten
  • 1 cup dark brown sugar (or alternatively ½ cup granulated sugar & ½ cup light brown)
  • ¼ cup all purpose flour
  • 1 ½ tsp. pumpkin pie spice
  • ½ tsp. salt
  • ¾ cup all purpose flour
  • 2 tbsp. sugar
  • ¾ tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • 2 tbsp. butter, cut into cubes
  • ½ cup buttermilk
  • Cinnamon sugar mix (2 tsp. sugar: 1 tsp. cinnamon)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prep a 2-quart baking dish with nonstick spray or grease and lightly flour.
  3. In a large bowl whisk together pumpkin, evaporated milk, eggs, sugar, flour, pumpkin pie spice & salt until well combined; pour into prepared dish.
  4. In a separate bowl whisk together the flour, sugar, baking powder, baking soda and salt.
  5. Using a pastry cutter cut the butter into the flour mixture until a crumbly consistency immerges.
  6. Slowly add buttermilk and stir until the mixture comes together in a rough dough. If too dry add a little more buttermilk or if too wet add a little more flour until it comes together.
  7. Drop dollops of the dough all over the pumpkin in the dish, sprinkle liberally with cinnamon sugar.
  8. Bake for 35-40 minutes until cobbler is set and topping is golden brown.
  9. Serve & enjoy! Drizzle with maple syrup, a dollop of whip cream or side of vanilla ice cream for a truly decadent fall dessert!
Notes
Candied pecans or almonds chopped would add wonderful crunch to the topping or alternatively a streusel topping!

Experiment with hints of ginger or nutmeg for versatility and extra autumn splendor in your dish.
