Mediterranean Red Bean Recipe

Ingredients
  • 5 cups of red beans (either canned, rinsed & drained or dried, soaked, cooked, drained and cooled)
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 small yellow or red onion, diced (more or less depending on preference)
  • 1 cup Kalamata olives, sliced
  • 1 cup feta cheese crumbles
  • Homemade Greek Dressing (find recipe on Howtohaveitall.net)
Instructions
  1. Combine all ingredients in a large bowl and mix well.
  2. Chill for at least 1 hour to allow flavors to marry.
  3. Serve & enjoy!
Notes
This salad would be great served in lettuce wraps or pita pockets for an easy filling lunch.
