Work Week Menu Plan: Less Than 30 Minute Meals

I cooked up a storm on Sunday! I made a yummy pumpkin cranberry bread and I will share that recipe with you this week. I also made a large beef chuck steak and the leftovers will be used in a meal this week. My goal each week is to plan work night meals that take less than 30 minutes to prepare. Most of the time I don’t get home until 5:45 so it is always a rush to get dinner going.

Monday- Fried fish, sweet potato fries and spinach salad

Tuesday- Beef Stroganoff (leftover beef chuck steak from Sunday)

Wednesday- Tomato Basil Soup & Grilled Cheese

Friday– Chicken and  Vegetable Couscous

      I am cheating this week! I found an organic refrigerated tomato basil soup premade on discount this week. If we like it, I may try to make up a recipe. We have plenty of basil in the garden! Have a great week!
