Chipotle Sweet Potato Burger Recipe

Sweet potatoes are such a versatile food. They can be eaten on their own, made into a side dish or be the star of the show! Sweet potatoes are a great source of fiber and beta-carotene. If you are looking to add more vegetarian meals into your diet, this is a great recipe. A veggie-licious burger alternative that’s sweet with a little smoke and heat!

The sweet potato mixture is sticky and takes a little patience to form into a patty. To help the process, use a burger press. Also make sure you place a healthy portion of panko in the burger press. Once the patties are formed, sear them on a hot skillet before baking.

I be these sweet potato burgers can be made  ahead of time and frozen. Just cool them completely before placing in the freezer. These chipotle sweet potato burgers would be great on these homemade whole wheat hamburger buns or wrapped in lettuce!

Chipotle Sweet Potato Burger Recipe

Ingredients
  • 1 sweet potato, baked or steamed and skin removed
  • 1 can white beans, rinsed and drained in HOT water
  • ½ cup white onion, diced
  • 2 tbsp. tahini
  • ¾ tsp. apple cider vinegar
  • 1 tsp. garlic powder
  • 1 tsp. chipotle powder
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ⅓ cup rye flour (or any preferred variety)
  • 1 cup Panko bread crumbs
Instructions
  1. In a large mixing bowl combine sweet potato and beans and mash well using a fork, potato masher or other kitchen tool. Add remaining ingredients and continue to mix and mash until thick and well incorporated together.
  2. Preheat a large skillet with coconut oil over medium-high heat.
  3. Preheat oven to 400 degrees F and set out a large baking sheet.
  4. Forming the patties can be pretty difficult because the sweet potato mixture is very sticky and thick. I used a plastic burger press to help me. Sprinkle a generous amount of panko crumbs into the bottom of the press, scoop in filling and spread with a spatula then generously top with more panko crumbs. Use your hand to press crumbs into sweet potato patty.
  5. Flip out of burger press into heated skillet and sear on each side 2-3 minutes or until crispy and golden. Remove from skillet to baking sheet.
  6. Continue until all patties are formed, seared and placed on the baking sheet.
  7. Bake in 400 degree F oven for 10-15 minutes.
  8. Serve as desired---on buns, in wraps, plated with your favorite toppings etc.
  9. Enjoy. Yields 4-6 veggie burgers depending on size and thickness.
