Chocolate Chip Banana Flax Muffins Recipe

One thing I can’t resist is baked goods. I love muffins, quick breads, cookies and all other home baked goodness. When making baked goods myself, I always strive to make the recipes healthier. Using whole wheat flour, reducing the sugar and oil content and adding supplements increase the nutritional value. Of course we have to have our sweets in there too! Wholesome goodness and a little chocolate decadence combine in this recipe to satisfy any muffin lover!

One little baking tip noted in this recipe is in regards to the empty muffin cups. This recipe only makes ten muffins. However, most muffin tins have twelve cups. To ensure even baking of the muffins don’t leave the extra muffin cups empty. Simply fill the empty muffin cups with water to ensure even baking.

Chocolate Chip Banana Flax Muffins Recipe

Ingredients
  • ¾ cup ground flax
  • 1 cup quick cook oats
  • ¾ cup milk (plus ¼ cup in reserve)
  • 2 ripe bananas
  • ½ tbsp. pure vanilla extract
  • 1 cup whole wheat or spelt flour
  • ½ tbsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • pinch of sea salt
  • 1 tbsp. coconut oil, melted
  • ¼ cup honey
  • ¼ cup molasses
  • ¾ cup chocolate chips
Instructions
  1. Preheat oven to 400 degrees F.
  2. Prep 10 muffin cups with paper liners or nonstick cooking spray.
  3. In a bowl combine flax, oats, milk, vanilla extract and bananas. Use a fork to gently mash the bananas and mix ingredients together. It should be thick but not tough to stir with the fork. If too thick slowly incorporate reserved milk to loosen it up.
  4. In a separate bowl sift together the flour, baking powder, baking soda, cinnamon and salt.
  5. In a small bowl whisk coconut oil, honey and molasses then add to oat mixture and mix well.
  6. Add wet ingredients to the dry flour mix and stir until just combined.
  7. Gently fold in chocolate chips.
  8. Generously fill 10 muffin cups all the way to the top.
  9. Fill empty muffin cups with water to ensure even baking.
  10. Bake at 400 degrees F for 5 minutes. Reduce temperature to 350 degrees F and continue baking for 12-15 minutes or until toothpick inserted in center comes out clean. Watch carefully to prevent over baking since these muffins have a wonderful brown color from the whole wheat flour and molasses.
  11. Serve & enjoy! Yields 10 large muffins.
