Why are Fresh Hard Boiled Eggs Hard to Peel?

If you have every tried to boil farm fresh eggs, you have probably discovered they are not the best for hard boiling. It’s not that the eggs won’t taste good hard boiled, it’s the fact that the shells can be very hard to peel. When fresh eggs are used, the membrane under the shell sticks tightly to the shell. This makes it very difficult to remove the shell without tearing the white apart.

To make it easier to peel your hard boiled eggs, make sure you don’t use the freshest eggs. We have a system for keeping track of our eggs. For hard boiled eggs we use the older ones – at least two weeks old. Remember that farm fresh eggs will keep for months if the bloom is not washed.
