Hootenanny & Baked Bananas Recipe

Hootenanny is a versatile German pancake. It can be served with sweets to make it a dessert or forgo the powdered sugar to serve with a main dish. Add diced tomatoes, peppers, onions and sausage and bake the hootenanny for a breakfast casserole!

Recipe: Hootenanny (German Pancake)

Ingredients

  • 1 cup white all-purpose flour
  • 1 cup of skim milk
  • 6 eggs (or 1 ½ cups of Better N’ Eggs for a healthier lower calorie substitute)
  • ¼ tsp. salt
  • 2 tbsp. unsalted butter, melted (substitute light or yogurt butter for less calories)
  • 2 tbsp. powdered sugar (to sprinkle over top)

Instructions

  1. Preheat oven to 400 degrees
  2. Mix together flour, milk, eggs & salt
  3. Pour mixture into 9×13 greased pan
  4. Drizzle melted butter over the top
  5. Bake @ 400 degrees for 25 minutes
  6. Remove from oven and sprinkle powdered sugar over the top

Recipe: Baked Bananas

Ingredients

  • 2+ bananas (amount varies on number of individuals being served)
  • Ground cinnamon, sprinkle as desired
  • Honey, drizzle as desired

Instructions

  1. Peel & slice bananas lengthwise
  2. Place in lightly greased glass baking dish
  3. Sprinkle with cinnamon
  4. Drizzle honey over the top
  5. Cover with tinfoil
  6. Bake @ 400 degrees for 10-12 minutes
  7. Serve over top of Hootenanny (or alternatively over ice cream, pancakes, French toast or with vanilla yogurt etc.)
