Russian Tea Cakes Recipe

This week I will start my Christmas baking! My all time favorite Christmas cookie is Russian Tea Cakes. My cookies always end up larger than the recipe calls for but that’s because I always want more than one little bite!

Russian Tea Cakes

1 cup butter
1/2 cup powdered sugar
1 tsp vanilla
2 1/4 cups flour
1/4 teaspoon salt
3/4 cup pecans or walnuts, very finely ground
Powdered Sugar for coating after baking

Cream together butter and 1/2 cup powdered sugar. Beat in vanilla. Combine flour and salt in a separate bowl. Add about a 1/2 cup at a time to creamed mixture, mixing well after each addition. Stir in nuts.

Form dough into 1 inch balls. Bake at 400 degrees for 10 minutes. Remove from oven and cool briefly. While still warm, roll in powdered sugar.

Tips

  • I use walnuts instead of pecans because they are cheaper.
  • You don’t want the cookies too warm when rolling in the powdered sugar or the sugar will dissolve.
