September: National Potato Month

September is National Potato Month. If you haven’t already, stockpile your pantry with fresh potatoes. There are many different varieties of potatoes to enjoy. This season our crop of potatoes are all from our local farmer’s market. The small red potatoes are perfect baked in the oven and/or grilled on the grill. They make decadent homemade fries in minutes. The local sweet potatoes are sweeter than ever.

Beyond the farmer’s market varieties, there are purple potatoes and many more! I can’t say that I’ve tried all of them but I really do enjoy these starchy gems. I (Litsa) grew up in a restaurant. We had baked potatoes on the menu every day. Thus, slicing open a baked potato was a go to meal any time of the day. Back then, I topped mine with butter, sour cream, salt, and pepper—-or loaded mine up with 57 sauce instead!?! Yummy. I’m a little more health conscious now so I use a sliver of butter and Greek yogurt if I’m enjoying a baked potato. I use lemon juice on my homemade fries that I fry with extra virgin olive oil. But I eat potatoes often.

One of my favorite restaurant memories of potatoes was the QUANTITY of potatoes that my dad delivered to factories during lunch. They’d call in with potato orders—stuffed with ham, cheese, mushrooms, veggies, etc. The pizza toppings at our restaurant were filling potatoes to the brim. Thus, I sometimes recreate a stuffed baked potato to reflect back to my childhood.
