Try Something New: Fava Beans

Fava Beans

Vegetable garden planting is beginning to take place around the country this spring! Obviously, any time you can buy fresh beans and/or other produce—the better! However, I always love to have a few cans of beans in my pantry to rinse and toss on salads and/or easy prep recipes with other fresh produce. On my last trip to Whole Foods Market, I picked up a can of organic FAVA beans! I wasn’t sure that I had ever had Fava beans but the label promised FIBER! Loads of fiber….so they made the list and came home with me! I added them to this Zesty Summer Salsa—a decadent addition to the diced vegetables!

summer salsaAs I (Litsa) began my list of posts to work on this week, I noticed that Fava beans were featured on DeDeMed’s Facebook page! She says, “You know the weather is warming up when you begin to see the Green Fava Beans at the supermarket!”

I’ll start scanning our local grocery stores for fresh Fava beans that are reported to be “the oldest cultivated plants in the world! But they’re virtually unheard of at the American dinner table. Their unique, nutty texture makes a perfect match for Mediterranean cuisine, and as this style of eating grows in popularity, the fava bean is being used more often in the West. The fava bean is very versatile and can be used in virtually any way other legumes are prepared and eaten!”

So what did I think about this fiber filled little bean!?!

A winner—-I’ll enjoy adding Fava beans to my pantry and dry bean stash this season—-as for growing them!?! I’ll check local farmer’s markets in West TN and other parts of the country that we travel to this summer!
