Vegetable Beef Soup Recipe

If you are looking for a hearty meal that is simple to make, vegetable beef soup is it!The great thing about this recipe is you can easily make substitutions or use leftover vegetables.

Vegetable Beef Soup

1 large jar Chunky Garden Ragu spaghetti sauce
1 can mild Rotel tomatoes
1-16 oz. package frozen soup vegetables or gumbo mix
3 stalks celery, chopped
1 medium onion, chopped
1 tsp chopped garlic
1 tsp sugar
1 ½ tsp oregano
1 ½ tsp salt
¼ tsp pepper
1 can beef or chicken broth
2 potatoes, chopped and cooked
6-8 cups water
1 lb ground beef

Combine all of the ingredients except for the ground beef and cook for at least an hour. Meanwhile, brown ground beef and drain grease. Add to the soup last.

Tips

  • Serves many! Package leftovers in zipper freezer bags for easy meals down the road.
  • Substitute V8 juice instead of water for added nutrients. You can do part water and part V8.
  • Can be made in slow cooker.
