A Green Plate Special

There are many different approaches for creating a green plate whether you are eating on the run—or simply having breakfast, lunch, or dinner at home! Greens are perfect for snacks. Think slices of avocados or strips of raw celery—-green juice or a Granny Smith apple—green grapes or a decadent salad. Additional tidbits to remember about greens is that they can be used shredded, stirred, within sauces or smoothies—or pureed for pesto! Here’s a cheat list for beefing you your plate with greens this season:

Shred for Salads: You can shred almost any green. Chop green leaves finely. Toss them about with your favorite dressing, cheeses, nuts, and/or vegetables.

Add to Sauces: Stretch pasta sauce by filling it with vegetables. Chop kale, chard, or spinach in the food processor, and stir into your favorite marinara sauce.

Power up Smoothies: Add a handful of spinach or kale to your morning smoothie. Balance it with fruits and/or yogurt.

Puree for Pesto: Substitute arugula for basil, or try mixing half basil with half kale, chard or watercress. Give Pesto Lasagna a try today!

Wilt in a Stir-Fry: Add chopped mustard greens, chard or kale for flavor and a nutritional punch. Add toward the end of booking, so they wilt but remain vibrantly green with served.

Stir into Soup: Add chopped greens right before serving—mix them right into your soup by stirring them in.
