Avocados From Mexico Mini Chef Contest

Being from California I love avocados. A little funny story, hubby grew up in Upstate New York. When I first met him he had never had Mexican food or avocados. One day he was shopping with me as the grocery store and he picked up an avocado and asked “Should we get these guacamoles?” Poor guy thought the fruit was called a guacamole since that is the only way he has eaten it!

We have introduced our boys to avocados since they have wonderful nutrients of potassium, fiber, folate, vitamin C, E and those B-complex vitamins. I know many kids shy away from “green” foods. Try introducing avocados on a sandwich or sliced in a salad. You can even use mashed avocado as a spread on a sandwich rather than mayonnaise.

One of our favorite ways to serve avocados is mashed as a dip and served with vegetables. It is a healthy snack alternative and kids always love dipping!

For Mashed Avocado Dip just mash up an avocado, add 1 tablespoon of fresh lime juice, salt and pepper to taste. You can also add garlic if your child like it. This is much milder than the traditional spicy guacamole dip.

Mini Chef Video Contest

Starting November 14th, Avocados From Mexico is hosting a video contest for parents of children ages 5-15. Submit a 1-3 minute video of your child/children preparing an avocado dish and be sure to have them include why they love avocados and the catchy Avocados from Mexico jingle found on their website. Videos will be judged on the Mini Chef’s personality and the presence of avocado.

One grand prize winner gets $1,000 in cash plus an HD Camcorder (for future home videos!), a Nintendo 3D, 2 games and a personalized Mini Chef jacket.

Video must be submitted by December 4, 2011. Public voting will take place on YouTube December 6-11. The video with the most Likes wins and will be posted on the website December 12th.
