Ginger snap cookies

It’s cookie baking time! An old favorite is gingersnap cookies. They are perfect with a cup of coffee or anytime! I (Litsa) have made this recipe four times with great success! Everyone loves them! This recipe was adapted from the recipe found here.

Ingredients
  • 1 cup unsalted butter, room temperature
  • 1 cup firmly packed brown sugar
  • 1 cup granulated white sugar
  • ½ cup molasses
  • 1 large egg
  • 3 cups unbleached all-purpose flour
  • 2 teaspoons baking soda
  • 2 tablespoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • Pinch ground cloves
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 375 degrees
  2. In large mixing bowl, cream together softened butter, brown and white sugars, molasses and vanilla.
  3. When mixed well, add egg, beat until smooth.
  4. In medium-sized mixing bowl, whisk together flour, baking soda, ginger, cinnamon, allspice and cloves.
  5. Set mixer at lowest speed and add dry ingredients. Mix until incorporated.
  6. Use a generous tablespoon and scoop dough onto a cookie sheet.
  7. Bake at 375 for about 10 minutes.
  8. Cookies will first puff up as they spread, but then will deflate and become flat. When the cookie falls, they are done!
