Homemade Banana Pudding Recipe

Banana Pudding

A classic dessert for a reason—banana pudding is sweet, creamy & sinfully delicious! This recipe takes this dish over the top with homemade vanilla pudding as its base—no boxed pudding mix here!

Ingredients
  • ¾ cup sugar (or corresponding measurement for sugar substitute)
  • ¼ cup all purpose flour
  • ¼ tsp salt
  • 3 cups of 2% milk
  • 3 large eggs
  • 1 ½ tsp pure vanilla extract
  • 8-10 oz vanilla wafers (about 60 wafers)
  • 4 large, ripe bananas, cut into ¼ inch thick slices
Instructions
  1. In a large saucepan, mix sugar, flour and salt then slowly whisk in milk.
  2. Cook & stir over medium heat until thick & bubbly---reduce heat to low and simmer for 2 more minutes then remove from heat.
  3. In a small bowl whisk eggs then add a ¼ cup of hot mixture and whisk together, add back to pan and heat over medium high heat until it begins to gently boil---cook for 2 minutes then remove from heat.
  4. Stir in vanilla & set aside to cool (stir occasionally to speed up the cooling process).
  5. Meanwhile line the bottom of an ungreased 8x8 in baking dish with vanilla wafers, top wafers with a layer of banana slices followed by half the pudding (once cooled); repeat.
  6. Seal with plastic wrap and refrigerate for at least 4 hours (overnight is better).
  7. Before serving crush remaining vanilla wafers and sprinkle generously over the top.
  8. Serve & enjoy!
