Tomato, Pesto and Cheese Sandwich Recipe

Homegrown tomatoes and basil are my favorite flavors. I was looking for a simple meal last week and saw the beautiful tomatoes and fresh bread sitting on my counter. A tasty sandwich was in the works!

Tomato, Pesto and Cheese Sandwich

1 Large Tomato
2 Tablespoon Basil Pesto
1/4 Cup Mozzarella Cheese
1/2 Loaf French Bread

Heat oven to 375 degrees.

Cut French bread in half. Spread basil pesto on the bread. Slice the tomato and place slices on top of the pesto. Sprinkle cheese on top. Bake for 5-7 minutes or until the cheese melts.

Tips

  • Add other veggies to the sandwich like roasted eggplant.
  • Try a different cheese like provolone or even feta.
  • Cut into smaller pieces and serve as an appetizer.
